Kedjenou chicken to celebrate!

For a festive meal, how about trying a new and easy recipe for kedjenou chicken? This Ivorian stew, traditionally cooked over a wood fire, is also delicious when you prepare it in a pot, a popular version that will win over all your guests.

Ingredients (for 4 people):

  • 1 chicken
  • 1 large can of peeled tomatoes
  • 5 to 7 bay leaves
  • 1 onion
  • 1 eggplant
  • 3 tomatoes
  • 2 garlic cloves
  • Thyme, without the sprigs
  • 1 teaspoon of grated fresh ginger

Directions:

Butter the bottom of a pot and place the cut-up chicken in it. Peel the tomatoes, dice them, chop the other vegetables and add everything to the pot. Add the garlic and spices, mix well and cook over medium heat, stirring regularly. While cooking, add the ginger and thyme. Add salt and pepper. Leave on the heat until the chicken is cooked. Serve with white rice.
