Our mouth-watering Mauritian chicken curry recipe!

We’re excited to share with you the recipe for one of the finest culinary delights from Intelcia’s home island of Mauritius. Tasty, balanced and flavorful, this dish will take you on an unforgettable culinary journey

Recipe serves 4

Ingredients:

  • 2 cloves garlic
  • 10 g ginger
  • 1 onion
  • 1 bunch parsley
  • 4 skinless chicken thighs
  • Juice of 2 limes
  • 1 c tbsp. sunflower oil
  • 2 sprigs thyme
  • 250 g crushed peeled tomatoes
  • 2 tsp. Massala powder
  • 2 tbsp. turmeric
  • 1 chili pepper
  • 1 bunch coriander
  • Salt and pepper

Instructions:

  • Start by finely chopping the garlic, ginger, onion and parsley separately. Debone the chicken thighs and cut the flesh into small pieces about 2 cm thick. 
  • Marinate the chicken pieces with lime juice, half the garlic, salt and pepper. Set aside in the fridge for 2 hours.
  • Heat a tablespoon of oil in a frying pan over low heat. Add the chopped parsley and chicken pieces. Lightly brown over high heat for about 5 minutes, basting occasionally with some water.
  • Throw in the onion, remaining garlic, thyme, ginger, a pinch of salt and the peeled, crushed tomatoes. Combine everything well, then cook, with the lid on, over a low heat for 10 minutes, flipping the chicken pieces from time to time. 
  • Add the Massala, turmeric and whole chili pepper. Cover and simmer over a low heat for a further 10 minutes. Finally, sprinkle with freshly chopped coriander.
