A light chocolate cream
For 6 people, you need:
- 400 g cottage cheese (0% fat)
- 125 g dark chocolate
- 1 teaspoon hot water
- 1 packet vanilla sugar
Directions

A fluffy, lemony cheesecake
For 6 people, you need:
- 400 g cottage cheese (0% fat)
- 100 g small biscuits (such as butter biscuits or speculoos)
- 75 g brown sugar
- 50 g no-sugar-added apple compote
- 3 eggs
- 1 lemon
- 1 packet vanilla sugar
- 1 tablespoon of cornstarch
Directions
- Step 1:
Preheat the oven to 200° (th.6/7). In a food processor, crush the biscuits. Once the biscuits are reduced to powder, place in a salad bowl and mix with the compote and the vanilla sugar.
Pour the mixture into a buttered pan. Refrigerate for now. - Step 2:
Wash and grate the lemon to remove the zest. Cut it in half to extract the juice. Keep in a bowl.
Separate the egg whites from the yolks. In a bowl, whip the egg yolks with the brown sugar. Then add the cottage cheese, cornstarch, lemon zest and lemon juice. Mix well.
Beat the egg whites until stiff and then gently fold them into the mixture using a spatula. The mixture must be smooth.
Then pour the mixture into the pan over the biscuits. Make sure to even out the surface. - Step 3
Bake the cheesecake in the oven for about 45 minutes, lowering the temperature to 180° (th.6). As soon as it turns golden, remove it and let it cool for 12 hours in the refrigerator. Yes, it takes 12 hours for a delicious cheesecake.
A feast of fruit with whipped cream in glasses
For 6 people, you need:
- 1 mango
- 75 g nectarines
- 1 yogurt (0% fat)
- 2 tablespoons lemon juice
- 10 cl full cream
- 1 tablespoon fructose
- Mint leaves for garnish ☺
Directions
- In a bowl, mix the fructose, yogurt, lemon juice and cold cream. Pour the mixture into a siphon or whisk it. Refrigerate.
- Wash the fruits. Pit the nectarines and the mango and peel them.
Cut all the fruit into cubes. - Just before serving, put a spoonful of whipped cream at the bottom of the dessert glasses. Add a layer of mango, a layer of nectarines, then a layer of whipped cream. Top with a few fruits and a mint leaf.
