Thieb, a touch of Teranga in your plate

Here is a simple and healthy recipe to enjoy thieboudienne (Thieb), the delicious Senegalese dish! Composed of rice, seasonal vegetables and fish, this complete dish listed in the Intangible Cultural Heritage of Humanity will delight the whole family.

Ingredients for 5 people

  • 1.5 kg fish (grouper or sea bream) 
  • 1 kg broken rice
  • 250 g onion
  • 2 cloves of garlic
  • 1 white cabbage
  • 2 tomatoes
  • 2 carrots
  • 1 cassava
  • 1 chili pepper
  • 250 g tomato paste
  • 25 cl oil
  • 1 piece of guedj or yet (if you have it)
  • 1 purple eggplant
  • 50 g tamarind
  • 1 bay leaf
  • 1 green bell pepper
  • Parsley
  • Salt and pepper

Preparation

  • Ask your fishmonger to gut and scale the fish
  • Start by peeling and chopping the onions, garlic and yet. 
  • Dice the bell pepper and chili peppers. Season with salt. 
  • Crush the tomatoes in a bowl and add the tomato paste with three tablespoons of water.
  • In a pot, sauté the onions, bell pepper, garlic, chili peppers, and the yet in oil. 
  • Add the tomato mixture, cabbage, carrots and cassava and mix. Pour in a large bowl of water, cover and cook for 20 minutes.
  • Meanwhile, wash and strain the rice and steam it for 15 minutes over the vegetables. Remove the rice and set aside.
  • Add the eggplant, fish and herbs and simmer. Once the vegetables and fish are cooked, carefully remove them from the pot and cook the rice.
  • To serve, place the rice in a large plate and top with the vegetables, fish and sauce.
