Super healthy shortbread!

For many children, the end of the year is synonymous with holidays. We take advantage of this time off to share good times together and prepare delicious healthy shortbread. A recipe for young and old to enjoy without moderation!

Ingredients: (for 15 cookies)

  • 1 egg
  • 20 g brown sugar
  • 50 ml coconut oil
  • 25 g agave syrup
  • 1 pinch of salt
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice
  • 95 g brown rice flour (or gluten-free flour)
  • 50 g almond powder
  • 1 pinch of cinnamon (optional)

Directions:

Preheat the oven to 180°C. In a bowl, mix all the ingredients in order except for the cinnamon. Then, shape a boule with the dough and let it rest for 10 minutes in the fridge. Meanwhile, spread a little flour on the counter. On the flour-sprinkled counter, roll out the dough with a rolling pin to form a rectangle about 2mm thick. Then, with different shaped cookie cutters, hollow out the dough and place the raw shortbread on a baking sheet covered with parchment paper. Bake for 10 minutes. Once ready, sprinkle the shortbread with cinnamon.

If you prefer, you can replace the cinnamon with melted chocolate, cocoa powder or coconut powder.
